2025 Pinot Gris, Yarra Valley, Victoria
Wild-fermented and left on lees for texture, this vibrant Pinot Gris shines with stone fruit and a long, dry finish
Hand-picked and whole-bunch pressed, the fruit was cold-settled overnight before being racked to stainless steel for fermentation. Fermented at around 15 °C for approximately 14 days, the wine was then left on lees for five months before bottling. The result is a Pinot Gris with a sublime nose of stonefruit and subtle yet intense aromatics, offering a textural palate that feels light yet powerful, finishing long, dry, and satisfying.
A wet spring and early summer required careful vineyard management to manage disease pressure. Hot, dry conditions in February and March supported ripening, with a steady flow of fruit keeping both vineyard and winery teams busy. Strong fruit set led to a return to normal yields across the property.
Hand-picked and whole-bunch pressed, the fruit was cold-settled overnight before being racked to stainless steel for fermentation. Fermented at around 15 °C for approximately 14 days, the wine was then sulphured and left on lees for five months before bottling. The result is a Pinot Gris with a sublime nose of stonefruit and subtle yet intense aromatics, offering a textural palate that feels light yet powerful, finishing long, dry, and satisfying.
Elegant and expressive, this Pinot Gris shows lifted stonefruit aromas and a silky, textural palate with layers of citrus and pear. Bright acidity balances its subtle richness, leading to a long, dry, refreshing finish.
Ideal with fine seafood such as oysters, scallops, or ceviche. It also pairs beautifully with light pasta dishes featuring lemon and herbs, or fresh goat cheese salads and vegetable tarts.
