A true example of modern Chardonnay, this wine showcases a harmonious blend of citrus and stone fruit on the palate, complemented by a fresh minerality. A subtle touch of French oak maturation adds depth and beautifully unifies the flavours, creating a well-balanced and sophisticated wine.
The 2025 growing season was marked by a mild spring and warm, dry summer, creating ideal conditions for extended hang time and concentrated sugar development in the vineyard. Careful canopy management allowed the fruit to achieve exceptional ripeness and complexity.
A Block is a north–south facing site with grey sandy loam soils and a gentle slope, ideal for Chardonnay, Shiraz, and Sauvignon Blanc. Planted in the mid 1980s, it offers mature vine balance and consistency.
Cold-pressed, settled overnight, and fermented in stainless steel over 2–3 weeks before sulphuring. Aged in tank for four months, then crossflow filtered and bottled. Unicorn Chardonnay is fresh and approachable, with stone fruit aromas, vibrant acidity, and an easy-drinking style.

Oak treatment gives this Chardonnay a softer edge making it an easy-drinking style with a clean finish to make it a versatile choice for pairing with a range of dishes or enjoying on its own.
Pan-seared salmon with a lemon-dill sauce, creamy pasta dishes like fettuccine alfredo, or soft cheeses such as brie and camembert.
