Re’em is how we start the harvest. All of the team, early morning light, a few hours of hand picking and pressing to make Re’em. Then we wash our hands of the sticky juice and it’s time for bubbles, Re’em of course, and food. It’s always Re’em. It’s a bit of a ritual that pays forward to give us some more wine for those important and special moments.
Re’em is made from Chardonnay, harvested well before everything else, whole bunch pressed for purity and elegance, fermented and then re-fermented, aged for 30 months on yeast and then aged again under cork. A premium, single variety, single vineyard, single vintage sparkling wine. A wine type that is rare to find and doubly rare for the tiny quantities in which it is made.
