The Chardonnay grapes for this wine were left to ripen for an extra month. The wine was fermented at cool temperatures in stainless steel. This process creates a sweet wine to enjoy on many occasions.
When the sugar/alcohol/ acid/flavour balance was deemed correct by the winemaker the fermentation was stopped with natural residual sugar present.
The result is a ripe style of Chardonnay with residual sugar. The style of the wine allows lifted floral and musk notes with peach skin, nectarine and ripe pear fruit notes to become apparent in the aroma of the wine. A lemon curd, peaches and cream and manuka honey balance the palate. A sweet Chardonnay style made to drink as an aperitif or with a light dessert such as deep fried doughnuts injected with lemon sauce.
