Description
The 2018 Inara Chardonnay was made from grapes which underwent two different processes. The first batch of grapes were harvested in the cool of the night and the clear juice fermented in stainless steel tanks at very low temperatures. At the end of the fermentation, the wine was oak aged for about 4 months before blending and bottling. A smaller portion of grapes were hand harvested and whole bunch pressed to French oak barriques for fermentation. At the end of the alcoholic fermentation, the wine was allowed to undergo complete malolactic fermentation to convert the green appley malic acid to the softer, creamier lactic acid. The two batches were then blended and bottled.
Tasting note:
The 2018 Inara Chardonnay has layers of complexity on both the nose and the palate. Classic cool climate Chardonnay characteristics of just ripe stone fruit are supported by toasty oak and a hint of toffee. The wine has a textured, creamy mouthfeel and would be perfectly matched with crispy fish tacos.
