Our 2017 Late Harvest Sauvignon Semillon is a blend of 65% Sauvignon blanc and 35% Semillon. The grapes were left on the vine until early April 2017 by which time the Semillon had started to shrivel and the Sauvignon blanc had developed some botrytis, both factors concentrating the sugars and flavours. After hand harvesting, the grapes were pressed using a very gentle, Champagne cycle. The juice was fermented at low temperatures and the fermentation stopped when the wine still had some unfermented sugar.
Tasting note: The 2017 Late Harvest Sauvignon Semillon is the sum of its parts. The Sauvignon blanc gives the wine aromas and flavours of cut grass and elderflower while the Semillon adds a touch of minerality, candied mandarin and white florals. The sugar is perfectly supported by the crisp, appley acid.
Served super chilled, the 2017 Late Harvest Sauvignon Semillon would be the perfect accompaniment to either a chicken liver pate or at the other end of the meal, with delicious sharp aged cheddar and truffled honey.
