The 2017 Inara Cabernet sauvignon is a lesson in what the Yarra Valley, and our vineyard, does best. The 2017 vintage was a return to the long, slow, cool vintages that the Yarra Valley is known for. The grapes were harvested at perfect ripeness before gentle crushing and immediate inoculation for fermentation. After gentle crushing, the must was fermented at moderate temperatures with twice daily pumpovers. At the end of alcoholic fermentation, the wine was oak aged for 4 months to add a bit of structure before early bottling and release.
Tasting note: The 2017 Inara Cabernet sauvignon has it all – blackcurrant, a hint of mint, blackberry compôte and a touch of spice from the oak. The tannins are fine and firm, providing generous support to the concentrated fruit. While designed to be consumed early, the wine will continue to improve over the mid term.
The 2017 Inara Cabernet sauvignon would be great with old school Steak Diane.
