Our Layla Pinot Noir is traditionally harvested from our ‘hill’ block. The block has a shallow soil profile with, quite uniquely, a high amount of sandstone scattered throughout. The nature of the block always delivers ethereal and pretty characters in the fruit. The winemaking is conducive to the elegant nature of the fruit, and fermentation is worked in a very gentle way. In 2015 the grapes were destemmed, cold soaked and treated with one daily punchdown for 18 days. The wine sat on lees until January 2016, when it was lightly fined and bottled.
A simple yet perfect food match for this wine is a pan-seared duck breast with five-spice, and a balsamic jus.
