The late harvest Chardonnay was picked one month after the Chardonnay and for table wine. The wine was fermented at cool temperatures in stainless steel. When the sugar/alcohol/ acid/flavour balance was deemed correct by the winemaker the fermentation was stopped with natural residual sugar present.
The result is a ripe style of Chardonnay with residual sugar. The style of the wine allows lifted floral and musk notes with peach skin, nectarine and ripe pear fruit notes to become apparent in the aroma of the wine. A lemon curd, peaches and cream and mauka honey balance the palate. A sweet Chardonnay style made to drink as an aperitif or with a light dessert such as deep fried doughnuts injected with lemon sauce.
