The base of the Rose is made from Merlot and was harvested at a moderate potential alcohol when elegant notes were present and the green herbal notes of the variety diminished. Once sixth of this wine is blended from the Saignée of our premium Cabernet Sauvignon parcels picked at a much later date. After the Merlot was picked it was pressed immediately to stainless steel for fermentation. The wine was fermented to dryness and malolactic fermentation was inhibited.
The appearance is salmon. Aromas of autumn red peaches, red rose petal, bay leaf, and orange pith with notes of grazing paddock on a misty winters morning.
The palate is savoury and the wine is dry. There are flavours of red apple skin, raspberry, blood orange, freshly picked cherries. Phenolics and acid play an important part in ensuring this wine maintains it’s savoury style.
A wine that is perfect for a warm summers day, and a wine that can easily be enjoyed with a wide range of foods. A casual meal that would be perfect with this wine would be charcuterie served with cornichons and pâté.
