The grapes for this wine are carefully managed from a small, pre-determined section of Pinot Noir on our estate. Careful attention to detail ensures a high quality grapes are produced.
The grapes were handpicked on 23rd February. Fermentation was conducted in small, 1 tonne fermenters with a small amount of whole cluster, as co-fermentation.
After a gentle, 2 week maceration the grapes were pressed and racked to barrel for malolactic fermentation and maturation. A mixture of barrique, hogshead and puncheon barrels were used, with 25% being new. The wine was blended in December 2015, and bottled in February 2016.
The appearance is crimson. On the nose there are forest floor notes with spice aromas of clove and star-anise. Fruit notes of cherry and lifted raspberry are present with a choc-orange aroma sitting around these fruit tones. The palate exhibits liquorish notes, green olive and bramble fruits. Floral notes of violets and lavender are also present. Some oak notes of chocolate and mahogany show through with building tannin throughout the length of the palate. The finish is elegant, yet long.
This wine will reward careful cellaring of up to 5 years from vintage.
This Pinot Noir is best enjoyed with warming dishes such as a garlic and rosemary lamb rack with field vegetables.
