This fruit for this wine was taken from the middle section of the Cabernet Sauvignon block on our Yarra Valley estate, only the exceptional wine parcels displaying true cool climate Cabernet Sauvignon structure and flavour were selected for the blend. Our estate gives exceptional conditions for late ripening varieties like Cabernet Sauvignon. The appearance is a deep Ruby red. Apparent choc-mint aromas fill the glass, with peppermint, blackberry and bramble fruits in tow. The pallet displays vanillin, four spice, cherry tomato and choc-mint characters. Red cherries, plums and cassis add defined layers to the complexity of the wine. Tannins are firm and smooth and they are balanced well with the weight and fruit flavours in the wine. Drink this wine accompanied a with Sirloin steak with garlic butter and sides of mash potato and sautéed broccolini. Enjoy this wine now, or the cellar carefully for up to eight years from vintage.
