Adam McCallum, Winemaker notes: Crafted in the authentic Yarra Valley style, this Shiraz showcases exceptional purity, achieved by omitting added sulfur. Handpicked, with approximately 25% whole bunches incorporated, a portion of the blend underwent carbonic maceration—a technique where whole grape clusters ferment in a carbon dioxide-rich environment, enhancing fresh, fruit-forward characteristics. The resulting wine is aromatic, elegant, and vibrant, with red currant aromas seamlessly transitioning to a silky palate marked by fine, velvety tannins.
Food pairing: Grilled lamb with rosemary and mint. Slow-cooked beef stew or braised short ribs. Spiced dishes like Moroccan tagine or Indian curry.. Roasted root vegetables or mushroom-based dishes.
