A refreshing dry and fruity Rosé, with a bouquet of strawberries, orange peel and elderflower.

Winemaker notes: The 2021 Unicorn Rosé is crafted from Merlot harvested at perfect ripeness for a full-flavored rosé. The fruit was processed immediately after harvest, with no cold soak and minimal skin contact. After pressing, the juice was chilled overnight, racked off gross lees, and wild fermented to enhance texture and mouthfeel. The wine was aged on lees in stainless steel for around 4 months before bottling.

Aromas of ripe raspberry, grassy herbs, earthy undertones, and a hint of orange citrus create a vibrant bouquet. On the palate, generous strawberry flavours combine with a fleshy, textured profile, balanced by subtle earthiness and herbal notes.

Food pairing: Grilled mediterranean vegetables with goat cheese. Creamy shrimp pasta. Sweet and sour pork.
