Re’em is traditional method sparkling wine made from Chardonnay. The process; grapes harvested well before everything else, whole bunch pressed for purity and elegance, fermented and then re-fermented, aged for 30 months on yeast and then aged again under cork. A premium, single variety, single vineyard, single vintage sparkling wine. A wine type that is rare to find and doubly rare for the tiny quantities in which it is made.

100% chardonnay aged for 30 months on lees. An attractive, bright green gold. Discreet, complex aromas of candied lemon, honeycomb and freshly baked goods. The palate is chalky, tightly wound and lemony, finishing with bright acidity. A crisp, aperitif style that I can see filling out nicely over the next 4–6 years.
